Even if you like it, you've probably eaten it once, the familiar pickled plums. Even if you look around the world, there seems to be no country or region other than Japan that eats pickled plums. If so, use only the A-grade product (*) of Kishu-produced Nanko plum, which is said to be the finest variety of plum, , and take time to make each process. Umeboshi may be said to be the best in the world.

Fresh Godai Ume

"Nanko Ume", now widely known as a brand plum, was born in Minabe Town, Wakayama Prefecture (at that time: Minabe Town) in the Showa 20 era. When the large and beautiful excellent varieties called "Takada Ume" were certified as the best varieties by the Ume Selection Committee, they were "Southern Takada Ume" and the selection committee chairman was a teacher at Nanbu High School. It was named "Nankoume".

1834 (Tenpo 5 ) Established in 1834, Higashi Farm's representative product, "Godai Ume," has a thin and thick skin, and the taste permeates the entire flesh of Nanko Ume. It is a dried plum that matches the taste. The difference between Godai Ume and general umeboshi is "real" and "manufacturing method" .

Nanko plums used for Godai plums are harvested in 6 months when the fruits have grown to the size of a ping-pong ball after pollination by honeybees. At that time, instead of picking it by hand, wait for the ripe fruit to fall naturally , so that the soft and thick flesh is rich in organic acids such as citric acid. You can harvest plums. From the harvested plums, only A grade umeboshi from Kishu is used for the 5th ume. After washing the dried umeboshi with groundwater filtered with Kishu Bincho charcoal, soak it for 30-40 days , and taste it in 3 times. I will put it on.


By the way, I think many people are concerned about the salt content of pickled plums. Godai plums have a salt content of 10 % (equivalent to salt per edible portion 100g ) and general ones (it is said that umeboshi pickled only with salt is around 20%). Compared to Umeboshi with low salt content . For desalination work, general products are drained at once using water or hot water, while Godai Ume takes 3 , 4 times as long as the pickling solution ( 30 < Since the salt is removed directly in (t4> I have been using it for a year), the original taste of plums is not spoiled.
